Overseeing kitchen staff Ordering supplies Producing baked goods Decorating and plating various pastries and desserts Keeping the kitchen organized Restaurant and hotel bakeries work with fairly small quantities of baked goods, therefore pastry chefs do much of the work by hand. They measure, weigh, and sift the ingredients, knead the dough either by hand or with a power mixer, and create breads, pies, cakes, icings, cookies, doughnuts, and delicately layered pastries. Pastry chefs often have assistants or apprentices who help them prepare baked goods.
